GNA University, School of Hospitality (SOH) organised one day Workshop  on  “Art of Aspic Jelly” bycelebrity Chef Khursheed Alam, Executive Chef Hotel Mariton, Jalandhar. Chef Khursheed Alam runs his own YouTube Channel “Bargain ka Chef” with 8 lakh followers. The objective of conducting this Workshop was to showcase the Cold work done in Garde Manger section,which is a highly skilled art.

Chef Alam has been associated with international as well as Indian hospitality brands. The Resource person shared a variety of cold preparations with the use of Aspic jelly including pate, Terrine and other cold savoury and sweet preparations with the use of fruits and jellies. Chef demonstrated points to consider while preparing the ingredients, secrets of setting jelly, demolding and presenting Aspic.

Students enjoyed this session and had valuable interaction with the Resource person. During the Workshop, a display of cold preparations was presented by the students under the guidance of the Chef.

The Pro- Chancellor S. Gurdeep Singh Sihra expressed, “I am happy that SOH is taking great initiatives in guiding students with latest techniques in the Hospitality sector.”

 Dr.  VK Rattan, the Vice-Chancellor, Dr. Hemant Sharma, the Pro Vice-Chancellor, Dr. Monika Hanspal, Dean Academic Affairs, Dr. Deepak Kumar, Dean SOH, Dhiraj Pathak, HOD SOH, appreciated and enjoyed the dishes prepared by the students and motivated them to stay updated with the latest techniques in their domain.
