Faculty of Hospitality, GNA University organised a three days workshop on Global gastronomy with the theme of Food from around the world with a twist of taste. The students of Hospitality Even semester actively participated in the workshop, handling various procedures working hands on with different cooking techniques and ingredients.The workshop started with the day one from the introduction and briefing of the entire kitchen practices ahead. Concept of fusion was described by chef through the presentation.
Day two started with the mise-en-plan of Indo Chinese fusion preparations e.g. Notty Bites (aloo and sweet potato tikki stuffed with Chinese spring onions served with schezuan sauce) Peppery fights (a fusion on paneer chilli with a desi chutney and papdi combo) and the students were divided into three different groups for individual practical.
Day three started with the international mix menu e.g. fusion Chaat platter, Stuffed Potato delight, Pasta Dum Biryani, Palak Paneer schezuan lasagne, Gajar Halwa Empanada with Fruity Chocolate Rabri.
The workshop was headed by Chef Dhiraj Pathak HOD-FOH and coordinated by Chef Sonu Katnoriya and all kitchen team. The students showed a great interest in the workshop creating various cuisines and food as the part of their learning. In the end, certificates were distributed to all participants.
